Easy.

One of the key ingredients is the pancetta or bacon. Bacon is a substitute and has a smoky taste. Bacon is not bacon, but it is Italian.

For 1 pound of pasta you need.

1 / 4 pound bacon, bacon (about 4 slices bacon, chopped 1 / 4 inch pieces)
4 egg yolks
1 cup Parmesan or less (plus extra for pasta, if it is served)
Black pepper to taste

Cook bacon until it just begins to dry and set aside.

Cook pasta al dente. (It will finish cooking in sauce)

Egg yolks and cheese.

Add cooked pasta with ham and bacon.

Stir and take off the stove.

Stir well and add cheese and egg yolk to coat pasta. The heat of the pasta will cook the egg yolks and put them in a creamy delight!

Sprinkle each serving with freshly chopped parsley and extra cheese.

I make it at least once a monthIt is very easy and taste fantastic. It is a very authentic recipe, like most Italian cooking is very simple. The quality of the ingredients are what makes the already great.

There really is no other then milk cheese carbonara. No butter or milk, is the creaminess of yolk and parmesan cheese.
